About this place
The signature Pure Tonkotsu starts with a broth that tones down the characteristic pungency and strong aroma of pork bones, bringing its mellow savoury flavour to the fore. Creamy and smooth, it clings to Hakata-sourced thin noodles, whose pleasantly firm bite makes the bowl easy to work through. Mendokoro M also offers medium-thick noodles, so diners can find the noodle thickness and cooking texture they prefer alongside the broth’s richness.
For those who want more after the first bowl, there are regular noodle refills as well as a smaller portion called Kodama (half-size refill), making it easy to order according to your appetite. The table is stocked with ground sesame, pepper, ramen seasoning sauce and red pickled ginger, as well as fresh garlic that can be pressed with a small garlic press. These let you change the flavour as you go. Add-ons such as tender, moist chashu pork and an egg praised for its yolk, and the bowl feels all the more satisfying.
Beyond the classic tonkotsu, the menu includes rich tonkotsu tantanmen and Shin Tonkotsu with medium-thick noodles, along with sides such as bite-sized gyoza and rice topped with chashu. Children’s ramen is available at an accessible price, and baby chairs are provided. The relaxed atmosphere suits anything from a casual solo lunch to a family meal, with diners able to settle in at their own pace.
